Spiced Breakfast Potatoes

For about a year and a half we’ve had the luxury of slow mornings. With work schedules the way they are and no kids in school or daycare we are able to leisurely go about our mornings without stress or harried breakfasts. Don’t think for a second that these are blissful, quiet mornings. We have two kids so there is often a healthy dose of whining and relentless begging to play. But as we aren’t also trying to dash out the door, we savor the slowness. We’ll usually sleep as long as the children let us (which is never quite as long as we should like), then stay in bed as long as they will let us (again, not as long as we would like) and then start thinking about caffeine and breakfast.

We both love to cook and we both REALLY love breakfast so we find these extended mornings to be quite a gift. We aren’t going all out with fancy brunch-like meals but we do allow ourselves the luxury of a breakfast that takes slightly longer to cook. Taking time in the kitchen is one of the few spaces that we feel a bit of respite from the constant, how shall I put it, parenting that we can’t seem to escape these days.

This particular breakfast I am going to share with you is a credit to Brad. He is also the reason I didn’t post it months ago. The man refused to measure anything. Never measured the spices, never measured the potatoes. He preferred to feel it out each time. Which always resulted in something yummy but never a clear set of portions or timings. But I finally took some notes and am ready to share this one with you.

This is dish has become a regular staple in our household. I think the only reason we keep potatoes stocked in our pantry is so that we can have this dish literally whenever we want. And even if weekends are the only time you can take your time in the kitchen, I hope this becomes a staple for you as well.

The recipe calls for already baked potatoes but we more often than not take the shortcut and instead of baking some the night before, cook them in the microwave for about 6-8 minutes. You can serve this with scrambled eggs if you prefer but I really recommend over easy because the runny yolk mixed with avocado, lime and crispy potatoes is just about the most perfect thing to put in your mouth.
